TORTELLINI SALAD - SERVES 8
2 cups frozen cheese tortellini
1 cup frozen sugar snap peas
2 cups diced chicken breast meat, thawed
6 slices American processed cheese, cubed
1/3 cup chopped red onion
1 cucumber, coarsely chopped
Tip: Cucumbers with thick skin and heavy wax coating
should be peeled before using.
1/3 cup sliced ripe olives, drained
1 medium tomato, seeded and chopped.
½ cup Italian Parmesan dressing.
Prepare tortellini and peas according to package
directions; rinse and drain. In large bowl, combine all ingredients;
toss gently to coat with dressing. Cover and refrigerate 1-2 hours
to blend flavors.
Prep Time: 20 minutes. Total Time 1 ½ - 2 hours. Serves
